Mac & Cheese

INGREDIENTS

Butter

Flour

Milk

Cheddar Cheese

Pecorino Romano Cheese

Macaroni

Bread

Lemon

INSTRUCTIONS

Take your Bread and chop it into bite sized pieces.

Add the Bread to a blender and zest in a Lemon.

Blitz the Bread until nice and fine.

Pop a sauce pan on the hob, turn the heat to medium and add a dash of Olive Oil.

Chuck in the Breadcrumbs and season.

While the Breadcrumbs toast off grate your Cheddar Cheese into a bowl along with the Pecorino Romano.

Toast the Breadcrumbs until crispy and golden brown.

Pop the Breadcrumbs into a bowl to cool down.

Pop a Dutch oven or sauce pan on the hob, turn the heat down low and add a couple of Tbsp of Butter.

Once the Butter starts to melt add a few Tbsp of plain Flour.

At this point, turn on your oven and pre heat to 180 degrees.

Mix the Butter and Flour into a paste and cook out for 2 minutes.

Start slowly adding Milk, a few splashes at a time, and keep stirring until you have a thick creamy white sauce.

At this point bring another pan of water up to the boil and heavily season.

Drop in the Macaroni and cook for 2 minutes less than the cooking time on the packet.

Chuck in the Cheese and stir through until it has melted and you will have a thick gloopy Cheese sauce.

Drain the pasta, add the Cheese sauce and stir.

Pop the Macaroni into a baking dish, scatter over the Breadcrumbs and grate over some Pecorino Romano.

Bake the Mac and Cheese in the oven for 15 minutes, and serve.
