Panzanella

INGREDIENTS

Large loaf of Bread

300g Cherry Tomatoes

2 red Onions

Basil

Parsley

Extra virgin Olive Oil

Balsamic Vinegar

INSTRUCTIONS

Cut the bread up into small cubes and lay out on a baking tray.

Pop the Bread in a pre heated Oven on 120 degrees.

Keep checking the Bread every 5 minutes, we want it crispy but without any colour.

While the Bread bakes slice the red Onions into long thin strips and place in a large mixing bowl.

Once the Bread is crispy, but not toasted, remove from the oven and leave to cool down.

Take the Cherry Tomatoes, chop them in half and throw them into the bowl with the Onion.

Add handfuls of the Bread and toss the salad together.

Take a handful of Basil, a handful of Parsley and finely dice.

Scatter the Basil and Parsley over the Panzanella and drizzle in extra virgin Olive Oil.

Add a good splash of Balsamic Vinegar and season with Salt and Pepper.

Toss the Panzanella together and serve immediately.

Enjoy.
