Pea & Mint Puree

INGREDIENTS

Frozen Peas

Fresh Mint

Double Cream

Butter

INSTRUCTIONS

Bring a pan of water up to the boil and chuck in 400g of frozen Peas.

Lower the heat to a strong simmer and cook the peas for around 8-10 minutes until tender.

Once the Peas have cooked drain them off and pop them in a blender.

Add a knob of Butter, a splash of double Cream, around 80ml, and around 6-10 Mint leaves.

Season, and blend until really nice and smooth.

Taste for seasoning, adjust if needed and serve.

Enjoy.
