Vinaigrette

INGREDIENTS

Shallot

Garlic

Dijon Mustard

Red Wine Vinegar

Extra Virgin Olive Oil

Salt and Pepper

INSTRUCTIONS

Start by Finely dicing the Shallot and add 2 Tsp to a Jam jar.

Next, take a clove of Garlic and using a hydroplane, grate the clove and add half a Tsp to the Shallots.

Then, add a Tsp of Dijon Mustard.

Season with Salt and Pepper and fill up a quarter of the jar with red Wine Vinegar.

Next, pour in some extra virgin Olive Oil, you need around 1 third Vinegar to 2 thirds Oil.

Pop the lid on the jar and shake it up gently, if you are too vigorous it will turn into a mayo.

Taste for seasoning and the acidity, and If your happy, it’s ready to use.
