1 Large Onion 2/3 Large cloves of Garlic 2 Flat Tbl spoons Tomato paste 3 Tins plum Tomatoes Small bunch of fresh Basil
INSTRUCTIONS
Pop a high walled frying pan on a low/medium heat. Add a splash of olive oil. Finely dice your onions and throw in the oil. Season the onions. Gently sweat off the onions with no colour, make sure you get them really soft. Finely dice your garlic and chuck in with Onion. Once garlic is sweated off and very slightly brown, pop in 2 flat table spoons of tomato paste. Roast off tomato paste for 3/5 minutes. Pop in 3 tins of peeled plum tomatoes. Throw in a small bunch of fresh basil. Stir and gently simmer for 15 minutes, then remove basil. Season sauce to taste and continue to cook until really thick, rich and jammy.
