Apple & Blackberry Crumble

INGREDIENTS

170g Plain Flour
100g Un-salted Butter
1 Tbsp Porridge Oats
1 Tbsp Demerara Sugar
1 Tbsp Caster Sugar
Between 8-10 mixed variety Apples
130g Blackberries
1 Lemon
1 Tbsp Un-salted Butter
Between 3-5 Tbsp Demerara Sugar (or, as required)
1 Stick Cinnamon, 2 Star Anise
50ml Brandy

INSTRUCTIONS

Add 170g Plain Flour, 100g Butter, 1 Tbsp Oats, 1 Tbsp Caster Sugar and 1 Tbsp Demerara Sugar to a large mixing bowl.
Mix and crumble with your hands until you have a nice crumbly crumble topping.
Set topping aside.
Chop half of your Apples into 1 inch cubes, leaving on the Apple skins.
Then, Grate the other half of your Apples into a separate bowl.
Place a high walled frying pan onto a medium heat, and add your Apple cubes, along with 3 Tbsp Sugar, 1 stick Cinnamon and 2 Star Anise.
Fry off until Apple is getting soft and caramelised, around 7-10min.
Add 1 Tbsp Butter and the grated Apple, and cook for a further 3-5min.
Then, zest in 1 Lemon and deglaze with 50ml brandy.
Check for sweetness, and add any more Sugar you need.
Add, your Blackberries, gently mix through, and cook for another 3min.
Remove your Cinnamon and Star Anise, and place the filling into a oven proof dish.
Scatter over your crumble topping... you can add as much as you want.
Place crumble in a pre heated oven, 180 degrees, and cook for 30-40min, or until you can see the filling is bubbling up the sides and topping is golden brown.
