Smoked Salmon & scrambled Eggs on Sourdough

INGREDIENTS

Butter

Sour Cream

Eggs

Smoked Salmon

Sourdough Bread

Chives

INSTRUCTIONS

Start this recipe by finely dicing up the Chives and pop them to one side ready to garnish the dish.

Take the smoked Salmon and thinly slice up into strips.

Next, cut off 2 nice thick slices of the Sourdough.

Crack 4-5 Eggs into a bowl.

Pop a sauce pan on a medium heat and drop in the Eggs along with a good knob of Butter.

Pop the Sourdough under the grill to toast.

Keep stirring the Eggs as they cook, we want them nice and creamy.

Turn the Sourdough once golden brown and toast the other side.

Once the Eggs are ready, add a heaped Tsp of Sour Cream, season, and give the Eggs a good stir.

Place the toasted Sourdough on a plate, add a good spoonful of the creamy scrambled Eggs.

Finish by draping over the Salmon along with a good pinch of the Chives, and serve.
