Red Onion, Chilli & Brie Pastry

INGREDIENTS

Red Onions

Chillies

Balsamic Vinegar

Honey

Brandy

Butter

Brie

Puff Pastry

Egg

INSTRUCTIONS

Pop a high walled frying pan on a medium heat, slice up the red Onions and add them to the pan with a knob of Butter.

While the Onions sweat off slice up some fresh Chillies, seeds and all.

Chuck in the Chilli once the Onion starts to slightly soften.

Once the Onions and chilli are soft, caramelised and have a touch of colour, then, add a good Tbsp of Honey.

Stir through the Honey then deglaze with Brandy.

Burn off the alcohol and add a splash of Balsamic Vinegar.

Reduce the Vinegar until you have a thick sticky sauce and pop the Jam to one side to cool.

Turn on the oven and pre heat to 180 degrees.

Then, take an egg and beat in a bowl for the Egg wash.

Then take the puff pastry and roll it out onto a chopping board.

Cut the pastry into single servings, around 2 inch by 3/4 inch and fold in the edges to form a boarder.

Brush the Pastry in the Egg wash and add a tiny sprinkle of sea Salt to the boarders.

Pop the Pastry’s in the oven and slice up the Brie Cheese.

Bake the Pastry for around 4 minutes until they start to get lightly brown and slightly puffy.

Add the Chilli and Onion Jam.

Bake for another 5 minutes.

Add the Brie slices and bake for another 4/5 minutes until the Pastry is puffed up, golden brown and the Brie has melted.

Remove the pastry’s and serve hot, warm or even cold.
