Chilli Cheese Burger

INGREDIENTS

Brioche Burger Buns
250g ground Beef (20%) fat
2-4 Chillies
2-4 Tsp Honey
Balsamic Vinegar
Cheddar Cheese
2 Tbsp Mayonnaise
1 Tbsp Dijon Mustard
4-5 small Gherkins
Baby gem Lettuce


INSTRUCTIONS

Add 2 Tbsp of your Mayo to a bowl and add 1 Tbsp of Dijon.
Finely dice up the Gherkins and add to the bowl.
Thinly slice your baby gem Lettuce and also add to the sauce.
Set the Sauce aside.
Take a small handful of your Beef and flatten out into a half inch thick patty (do not compress too much) and set aside.
Thinly slice your Cheddar Cheese and set aside with the Patty's.
Thinly slice your Chillies.
Pop a sauce pan on a medium to high heat and add a splash of Olive oil.
Throw in the Chillies and caramelise.
Add a few Tsp's of Honey to the Chillies and deglaze with a splash of Balsamic Vinegar.
Pop a frying pan on the hob set to medium and add a generous knob of Butter.
Lay in your Brioche Buns and toast off.
Remove the Buns and turn the heat up to high.
Season the Patty's and lay into the pan.
Sear for 3-4 mins per side until caramelised then lay over your Cheese.
Pop the Patty's under a grill for 40 seconds until the Cheddar Cheese has melted.
Pop your Toasted Brioche Buns on a plate and add a dollop of the Burger sauce.
Lay on the Patty and finish with a spoon of the Chillies.
