Parmesan Eggs on Toast

INGREDIENTS (for 2-4 servings)

Eggs

Parmesan Cheese

Bread (of your choice)

Chives

INSTRUCTIONS

Finely dice up a small bunch of Chives.

Crack 3-5 Eggs into a mixing bowl.

Grate in a good handful of Parmesan and mix into the Eggs.

Slice up your Bread and pop them under the grill.

Stick a pan onto a low to medium heat and add a small knob of Butter.

Pour the Eggs into the pan and stir continuously.

Just as the Eggs are getting creamy and almost cooked add a good pinch of Salt and a small dash of cream.

Give the Eggs one last good stir.

Lay a few slices of the Bread on a plate and spoon over the creamy Parmesan Eggs.

Finish with a sprinkle of the diced Chives.
